Coleslaw Dressing

Jeez, Buddy's Friday seems to roll around awfully quickly!  lol

And this week, another recipe.  This time for a very nice sweet/sour coleslaw dressing.

There are quite a few coleslaw dressing recipes that require an egg or two, and sometimes the dressings are not 'cooked' which makes some people a bit nervous. Here's my recipe, no egg needed, that I tweaked here and there from many others, we had it this past week and it will definitely be the coleslaw dressing from now on.

While I don't have exact measurements for the coleslaw itself, this amount of dressing was more than enough for half of a medium sized cabbage, 3 medium (6-7in. long) carrots and half of a large sweet onion. All measurements are approximate and should be adjusted to suit your personal tastes, eg: sweeter or more 'bite'.

Creamy ColeSlaw Dressing

 

250ml mayonnaise

150ml creme fraiche (or sour cream)

1 Tbsp horseradish sauce (mild-hot, to taste)

1 tsp English mustard

Juice of one whole lemon

3 Tbsp. caster sugar (granulated is ok too)

1 tsp salt

1/2 tsp pepper

Whisk (using a wire whisk is easiest) together the mayonnaise, creme fraiche, horseradish and mustard until mixed thoroughly. Add all of the lemon juice and whisk again. Then add the sugar, salt and pepper whisking once more. Pour over prepared coleslaw and refrigerate for at least 1-2 hours.
