Freezing Hints And Tips, Plus TWMP

We purchased a good sized upright freezer a few months back and shortly after that, half a pig. Now, with the pork dwindling down in amount a bit I've been looking around t'internet for tips on freezing. Prior to buying the large freezer we only had a small one (3 drawer) and it was mostly a case of using it for ice cream, the odd frozen pre-pack this or that and a few leftovers. Now I'm interested in freezing a variety of foods, some fresh - some home cooked and packaged as HM 'ready meals' and really anything that I can either buy or make in bulk and portion out in single serving containers. Here are links to the sites that I found the best/most information on, but I do have to say that there were a few cases where the information about a certain food conflicted somewhat from site to site, and I'm thinking it's a case of common sense to rule in these instances. Should I ever just find myself completely dumfounded by something, I've plenty of blogger friends to ask! :-))

Hopefully these will help someone who like myself, was a bit "iffy" about freezing and not knowing what to do to prepare foods and I was surprised at all of the types of foods that can be preserved by freezing - apparently there aren't many that can't be, in one form or another! Now on to the meal plan -
SUN- Roast Chicken / HM Stuffing / Yorkies / Veg
MON- Chicken Casserole (from Amish Cookbook) / Veg
TUE- Pork slices / Hash Browns / Veg
WED- Out-BH day off
THU- Macaroni Cheese / Roll / Veg
FRI- Cheese Steak Baguettes / Chips / Garden Salad
SAT- Hot Dogs / Onion Rings / Garden Salad
No, we don't have Macaroni Cheese every week, lol. Once again it was left off of last weeks menu as I was a bit "off" on Sunday and not up to the allotted Sausage, Mash/Gravy & Veg, so we had something a bit blander and moved the entire menu down a day. Seems as though the Macaroni Cheese is the one that always gets set aside, we'll see if we can't get it in this week!
I made some peanut butter fudge and an applesauce cake with caramel frosting this week, may get those posted in time. Not sure if I'll end up doing any baking this week or not, maybe just bread. Then again if the mood strikes and the ingredients are in the cupboards......
